After training at Michelin-starred Jeju Noodle Bar and Momofuku, we opened eShin in
Stony Brook, NY, and later expanded with Yume Ramen in Smith Haven Mall.
Now, we’re excited to bring eShin to the Hudson Valley, in partnership with Ichi Sushi, a
local favorite since 2018 known for authentic Japanese flavors. Together, we combine
tradition and innovation to offer a refined yet welcoming dining experience.
